Monster Cookies have been a staple in our household since Emerson & I started dating in 2015. They are his FAVORITE cookie, or at least one of them (the man loves his cookies). I usually do some variation of them for each holiday or season changing the color of the M & M's. And my recipe was classic. But I came across a flourless version and played with it until it was perfect and I have to say, this is the best monster cookie we have ever made! They are chewy and delicious, and stay that week for up to a week! Of course, for Spring we used the pastel M & M's! They would be perfect for Easter or just a cozy Spring Saturday!
